When we visit our local Thai restaurant, this is the only dish my daughter will eat … Pha Ram Long Song, or satay chicken. As promised to some fellow Aldi shoppers … here is the recipe my sister gave me … it’s restaurant quality!
Ingredients (4 servings)
500g chicken breast (or thigh) skinless
1Tbl red curry paste
1 tin Coconut Cream (full or low fat) or Coconut Milk
1 or 2 Tbl Katsup Manis
1/2 cup crunchy Peanut Butter
150g Baby Spinach Leaves
1 tsp oil (extra virgin or sesame)
2 packs of Aldi 2 minute noodles (or 1 pack Singapore Noodles)
Cut the chicken into long thin strips.
Place the 2 minute noodles into a large bowl and cover them with boiling water (no flavour sachets).
Heat your Electric Wok (or similar) until the surface begins to smoke.
Add a little oil to the wok and cook the chicken in small batches.
Remove chicken from the wok.
Add the red curry paste to the wok, and be careful, as it will spit.
As soon as the curry paste starts to bubble, add the coconut cream/milk.
Add the katsup manis then the peanut butter.
Stir together until the peanut butter has become soft and melted into the sauce.
Add in the cooked chicken and spinach leaves.
Drain the noodles and add.
Serve and enjoy.
